Ingredients:
500 g wheat flour
1 tablespoon of yeast
90 g of sugar
2 eggs
150 ml of milk
100 g of butter
1/2 teaspoon salt
10/12 g of matcha, depending on whether you want to give it more or less flavor.
To brown it:
1 egg yolk
2 tablespoons milk
Preparation:
Heat the milk and add the yeast. Let stand 10 minutes until the mixture thickens and foams.
In the blender bowl, put the flour, eggs, sugar, salt and milk. Knead until you get a paste. Then add the chopped butter and continue kneading for 4 or 5 minutes.
Divide the dough in half and in the half you leave in the bowl, add the matcha. Mix it. Place each of the halves in a floured salad bowl and cover with a cloth. Let stand two hours.
Take out the dough without matcha and fold it several times on itself to degas it. Then extend it to form a rectangle of 35x25cm.
Do the same with the matcha dough and place this rectangle over the previous one.
With a knife, cut the dough in half, lengthwise.
Squeeze the two ends and strain them. Finish by pressing the edges down.
Place the brioche in a mold, cover it and let it rest for 1 hour and a half. Squeeze the edges down.
Before putting it in the oven, brush it with the yolk dissolved in milk.
Cook it 40 ‘at 160 ° C.
