@anikoszabophotography has created this amazing recipe, allowing us to make the japanese version of the most world famous cookie.
Ingredients needed for the cookies:
240/5000300 grams of flour
120 grams of unsweetened cocoa
3/4 of a teaspoon of salt
280 grams of butter at room temperature
130 grams of brown sugar
1 teaspoon of vanilla extract
Half teaspoon of almond extract
Ingredients needed for the filling:
150 grams of butter at room temperature
200 grams of icing sugar
1 teaspoon of matcha
a pinch of salt
3/4 of a teaspoon of vanilla extract
Prepare the cookies:
Prehead the oven to 160ºC.
Sprinkle the work surface with cocoa powder.
Mix cocoa, sugar and salt. Add the butter.
Deposit this mixture on your work surface and knead it.
Roll it up and cut circles of about 5 cm.
Move these circles to the baking sheets.
Bake these cookies for 20 minutes and let them cool.
Prepare the filling:
Beat the butter with sugar and matcha until creamy.
Fill the cookies using a pastry bag or a knife.
