cucumber noodle thing — actually proper filling

Right so I was convinced a salad with no actual carbs would leave me hungry in about 20 minutes but this one genuinely kept me going all afternoon. Basically just spiralised cucumber, cherry tomatoes halved, a big handful of rocket, some chickpeas from a tin (rinsed, obviously), and then feta crumbled on top. The dressing is just olive oil, lemon juice, a tiny bit of garlic and some dried mint — that's it. The chickpeas are doing the heavy lifting tbh. And it comes together in maybe ten minutes which on a school night after a full day with Year 5 is honestly all I've got. Spiralised cucumber or just ribbons if you haven't got a spiraliser, half a tin of chickpeas, cherry tomatoes, rocket, feta, olive oil + lemon + garlic + dried mint. Mind you I did add a bit of collagen powder into the dressing this time, just stirred it in cold — you honestly can't tell the difference and it thickens it up ever so slightly which works a treat.

aye cucumber goes further than people think, I use it in like three different ways during the week

dried mint in a dressing is underrated, I'd probably throw some toasted cumin in there too

chickpeas really do earn their place here — protein + fibre combo is proper good for satiety

do you drain the chickpeas well or does it make the dressing go watery?
