dal tadka toast is a thing now apparently
Right so I had leftover dal in the fridge from two nights ago and not enough bread for a proper lunch and somehow this happened. Toasted sourdough, warm tarka dal spread on top like it's hummus basically, then a spoonful of coconut yoghurt, a few sliced radishes, and coriander from the pot on my windowsill. That's it.
I know it sounds a bit unhinged but honestly it works. The dal already has all that cumin and haldi depth in it, the yoghurt cools it down, the radish gives it a crunch so it's not just soft-on-soft, which was my fear. It took maybe four minutes to put together because the dal was already made. Protein-wise it's actually doing a lot for a lunch I threw together from fridge scraps — lentils are carrying the whole thing. Chai was very interested in the coriander which I did not expect from a greyhound but here we are. Would 100% make this on purpose next time.
