spring salad that actually fills me up

Made this on a whim yesterday and it's genuinely decent so thought I'd write it up. big handful of rocket and spinach mix, half a tin of chickpeas drained and patted dry, cucumber, cherry tomatoes, whatever's in the fridge basically, soft boiled egg (7 mins, cold water immediately after), tahini thinned with lemon juice and a bit of water, tiny pinch of salt. The tahini dressing is the bit that makes it feel like a proper meal rather than just... leaves. I was sceptical about that for ages tbh. Chickpeas give it enough protein to not be hungry again in 40 minutes which is always the problem with salads. Takes about 12 minutes including boiling the egg. I had it at the start of my eating window and it sat well before an afternoon of calls.
