spring salad thing that's been on rotation

Right so I've been doing this for about two weeks and it's officially replaced the chickpea autopilot situation. Basically: shaved asparagus, frozen peas (defrosted, obviously), whatever soft herbs I've got — mint and dill have been working dead well together — then a soft boiled egg on top. Dress it with lemon juice, a bit of olive oil, salt. Done. The shaved asparagus thing sounds fussy but it takes like 90 seconds with a peeler and it's honestly better raw than cooked for this. Less faff too, which is the main thing at 7am. I've been packing it in the glass container with the dressing separate and it holds up fine by lunch. The ROI on this salad is genuinely unreal for how little effort goes in.

I've been doing something similar with shaved courgette lately, lemon and olive oil dressing is just the one isn't it. might steal the dill idea though, I always forget I have it

mint and dill together is a combination i keep coming back to, works with basically anything green

aye mint and dill is a solid combo, I throw it into anything with peas or broad beans too
