the watermelon salad I made by accident

So I had half a watermelon going soft on the counter and basically zero plan for dinner and this is what happened. I just started chopping things and it genuinely turned into one of those meals where you're like... wait, that worked? It's dead simple. Cubed watermelon, a whole can of butter beans (rinsed, dried off a bit so they don't make everything watery), thinly sliced cucumber, red onion soaked in a bit of lime juice for like 10 minutes first — that takes the sharpness down, proper important step. Then I tore over a load of fresh mint and some coriander because I always have both in the fridge. The dressing is where it gets a bit more interesting. Lime juice, a small pinch of chaat masala, a tiny bit of maple syrup, and a splash of sesame oil. I know that sounds like a weird combination but the chaat masala on watermelon is honestly one of those things — slightly tangy, a bit salty, cuts through the sweetness. You can get chaat masala in any South Asian shop, or honestly most big Sainsbury's now. The butter beans do a lot for the protein side of things without you even noticing, they just sort of absorb the dressing and sit there being quietly useful. I had it with some torn up flatbread on the side and that was dinner sorted in maybe 15 minutes. Mind you I nearly didn't add the onion because I was being lazy and it would've been a lot worse without it. Don't skip the onion. 🌱

how long do you soak the red onion for — is 10 minutes actually enough to take the edge off?

yeah 10 mins is enough tbh, I usually do it while I'm prepping everything else and it's fine
