this soup basically made itself and I'm obsessed
Right so I had half a butternut squash going soft in the wicker basket, a sad looking leek, and some red lentils I've been meaning to use since basically September. Threw it all in a pot with stock and a bit of cumin and honestly wasn't expecting much.
It's really good though. Like properly warming, the kind where you eat a bowl and feel sorted for the afternoon. I blended half of it and left the rest chunky which I think is the move — gives it a bit of texture rather than just being wallpaper paste. Added a tiny squeeze of lemon at the end which I nearly didn't bother with but it makes a difference tbh. Dead simple, took maybe 35 minutes, and nothing went in the bin. Autumn is the one season I'm actually grateful for veg.
