this watermelon and feta thing is properly refreshing

Right so I made this last weekend and honestly it's become my go-to for when it's too warm to even think about cooking. Basically just cubed watermelon, crumbled feta, a handful of fresh mint, thinly sliced red onion — and that's it. I drizzle a bit of olive oil and a squeeze of lime over the top and leave it in the fridge for like ten minutes before eating. That's proper lovely, that is. Mind you I was a bit sceptical the first time because watermelon in a savoury thing felt weird to me. But it works. The feta cuts through the sweetness and the mint makes it feel really clean and summery. I've had it as a side with grilled chicken a couple of times and also just on its own for lunch. watermelon, cut into rough chunks / feta (check it's GF obviously — most is but worth a look) / fresh mint / red onion, sliced really thin / olive oil, lime, black pepper No cooking. Barely any washing up. Does the job on a hot afternoon.

honestly decent post-training snack, light enough that you won't feel sick if you eat it too soon after

how long after training do you leave it before eating this?

depends on how hard the session was tbh — I'd say 30–45 mins minimum, you want your stomach to settle first
