Matcha detox soup

With a combination of fresh and nutritious ingredients like spinach, parsley, and cauliflower, enriched with the antioxidant power of matcha, this recipe not only detoxifies your body but also provides energy and flavour. Perfect for enjoying at any time of the day, this soup will help you feel refreshed and light.

Ingredients:

  • 2 1/2 handfuls of tender spinach
  • 1 handful of chopped parsley
  • 1/2 cauliflower
  • 1/2 onion, chopped
  • 2 g of Original Matcha
  • 1/2 teaspoon of grated ginger
  • 1 litre of vegetable broth
  • 1 tablespoon of coconut milk
  • Salt and pepper to taste
  • 1 tablespoon of extra virgin olive oil (AOVE)
  • Japanese radish sprouts and pumpkin seeds for garnish

Instructions

Heat the oil in a pot, add the onion, and sauté it gently. Add the cauliflower and sauté for about 5 minutes until it becomes softer.

Add the vegetable broth, cover with a lid, and bring to a boil. Once the vegetables are soft, add the tender spinach, parsley, ginger, matcha, and coconut cream. Let it simmer for another 1.5 minutes.

Blend with a hand blender and season with salt and pepper to taste.

Garnish with the sprouts, pumpkin seeds, and a drizzle of olive oil before serving and enjoy!
