Rooibos sesam cookies

If you have 30 minutes free, you must make these delicious sesame and rooibos tea cookies 🤎. They’re healthy and easy to make, but more importantly… they’re absolutely irresistible. You’ll only take 30 minutes to prepare them and about 5 minutes to gobble them up while standing at the counter “waiting for them to cool”. 

Ingredients:

  • 100 g tahini
  • 5 tablespoons maple syrup or honey (depending on whether you prefer the vegan option)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon bicarbonate of soda
  • 3 g rooibos tea
  • 100 g almond flour
  • 4 tablespoons sesame seeds
  • A pinch of salt

Instructions

Prepare all the ingredients and mix them in a bowl, except the sesame seeds.

Form a ball with your hands from the cookie dough, roll it in sesame seeds, and place it on a baking tray lined with parchment paper.

Using the flat base of a glass, gently compress the cookie ball until it is just under 1 cm thick. Repeat with the remaining cookie dough and refrigerate for about 15 minutes.

Bake the cookies at 180 ºC for about 8 minutes or until they are slightly spread and golden on top. Allow them to cool on the tray for 10 minutes before devouring them 🤤.
